I am all about instant gratification…especially at certain times of the month… long gone are the days when I’d mark my calendar because my cravings are all the calendar I need…I mean I do indulge in self gratification when it comes to food…on the daily! but when its that time of the month the cravings take on a life of their own… Pookie can bear testament to this… If I ask for a Lindt & Sprüngli chocolate bar and he gets me a Guylian chocolate bar instead – all hell is going to break lose ‘I ASKED FOR MY SWISS CHOCOLATE BAR WHY PRAY-TELL DID YOU GET ME THE BELGIAN CHOCOLATE WHYYYYYY???!’ Thank God for Pinterest because theres always a pin that describes every situation you could think of perfectly! All my rambling can be summarized by the pin below!
It also never ceases to amuse me how Zara always seems stupefied when I tell her I’m going to bake something…if it’s a cake she’ll tell me ‘mommy I dint know you could make straw berry cake!’…she doesn’t realize that the basics are all the same! to her the process of making a chocolate cake or a vanilla cake is way different from making a strawberry cake! or in this case she just dint believe I could make peanut butter chocolate chip cookies…despite the fact that she’s had my peanut butter cookies, chocolate chip cookies, oatmeal and chocolate cookies before!
I absolutely looooooooove this recipe because
- It is mind blowing…no! mind boggling! how easy it is to make.
- It takes a nano second (exactly how long is a nano second?…to be googled at a later date) to mix and only 10 minutes to bake
- It has just the right amount of crunch around the edges and hint of chewiness at the center. So you don’t need to dunk it into a glass of milk…or a cup of hot tea…..Your saliva is all the lubrication you need!
- Theres peanut butter and chocolate in it
- My little Zizwhizz thinks I’m a hybrid of a power puff girl and nanny plum (for those of you who don’t have the pleasure of having a kid under 5 in your house hold thats a character on Ben & Hollys little Kingdom…which is a cartoon by the way!)
✦⊱ཞ INGREDIENTS ཞ⊰✦
- 1-1/4 cups flour
- 1/2 tsp. Baking Powder
- 1/2 tsp. baking soda
- 2Tbs cornstarch
- 1/4 tsp. salt
- 1 cup margarine, softened
- 1 cup Peanut Butter
- 11/2 cup granulated sugar
- 1 eggs
- 2 Tbsp. vanilla
Pre-heat your oven to 170 degrees celsius.
Mix the flour, baking powder, baking soda, cornstarch and salt and set aside. Mix the margarine, peanut butter and sugar in large bowl with a handheld mixer until light and fluffy. Add the eggs and vanilla and mix. Gradually add flour mixture, beating well after each addition.
Drop tablespoonfuls of dough, 2 inches apart, onto a baking sheet sprayed with cooking spray.
Bake 8 to 10 min. or until golden brown.
Cool on baking sheets 5 min.; transfer to wire racks. Cool completely.
I eat cake because it’s somebody’s birthday somewhere…and because Marie Antoinette said: “Qu’ils mangent de la brioche” – “Let them eat cake”
My princess is turned four years seven months and thirteen days!!!! It was her idea to celebrate her 4 year 7 month 13th day birthday…I was game for it because….hey, any excuse for cake!
Granted she probably had a different cake in mind…the Buddy Valastro kind with a talking a minnie mouse, chocolate fountain plus a cameo from barbie & friends and accompanying theatrics! But I assure you what this cake lacks for in theatrics it more than makes up for in scrumptiousness and gorgeousness factor (on a gorgeousness scale of 1-10, it is off sits at an off the scale 1000!). Happy New Year!! It feels like I’m spring cleaning an old lady hoarders attic…. it’s been a while since posted! Hopefully its like riding a bike or a roll in the sack after a long dry spell…you get the gist!
A lot has happened since I last posted something…I started postgraduate school, travelled quite a bit, ate quite a lot, moved houses…cooked up a storm (I have pictures for evidence!) always meaning to post something but between school, work and squeezing in my reality TV fix I literally felt like my day had 16 hours! It wasn’t all frenzy and headless chicken running around though- there were times when my life was very simple but most of the time it felt as complicated as a Facebook relationship status … to sum it up between September 2015 and today…
We had awesome holiday….I took my leave of absence from work in November, because I had exams, and I resumed work in January so the only bags under my eyes are Chanel! We really had no itinerary for our holiday, a few days before Christmas a friend of ours- Sarah popped into our new place and we got to talking about how we were over ‘Kenyan Coast December Plans’ (picture us sipping tea with our pinkies pointing out disdainfully imagining the throngs of humanity that would no doubt be at the Coast….with the exception of pookibear, he would be holding his tea mug- pssst, tea mug versus tea cup totally makes this scene uber masculine!…. oh and of course there were crumpets and cucumber sandwiches with the edges cut off…..I left out the scones because I feel in Kenya scones are not very high tea-ish!! hahahahaha!). - If they have a pulse, are breathing have camera’s following them around as they do things like take bum selfies… or worse-those pouty selfies (Kim –Insert Cardinal Point– Nee Kardashian);
- If they don’t hesitate to lunge across dinning tables (in classy restaurants) with wine bottles (Evelyn Lozada);
- If they wear enough eyeliner to put a racoon to shame and spot hair do’s that need clearance from airspace authorities ( The Jerseylicious Cast)
- After this confession I feel I need to redeem myself … I like Oprah’s Lifeclass and I actually try to lead a Zen, meaningful life…. I EVEN KNOW SOME YOGA POSES…like downward dog (very useful even when partaking in non-yoga interactions… ahem! ahem!) Lotus pose…FINE! FINE! I just googled the Lotus pose!
