Ladies and gentlemen there’s a bun in my oven?????!! (insert expletive!) the contraceptive failed!!!! (shoot me now!) … ever since I watched finding Nemo about a month ago (for the first time!!!)….I do love a good digression … the other day my friend Shella was making reference to the movie Finding Nemo and she said Nimo….as in Wairimu… It’s not her fault you see, her middle name is Njeri After All!!!! Shella don’t Kill me for divulging this on my very important blog that will one day have millions of readers! hahahaha! Next time retain me as your lawyer…or shrink if you want our pinterest conversations to be kept confidential!!! … back to the point I was getting at – ever since I watched Finding Nemo with Shella, Bambam and Zizmaroo, I have been experiencing ‘Dory’- like lapses of memory! What I really meant to say was there’s a bun banana cake in my oven! Don’t pop the champagne yet!….before I delve into the banana bread post allow me to share life tip #1 👇

While we are on the subject I thought I would share some tips on how to eat a banana … You’ve been doing it wrong!!!

I have been obsessed with banana bread ever since we went to Ol Pejeta Conservancy May this year and stayed at the Serena Sweet Waters Camp and for breakfast, the day we were checking out, the largest loaf of banana bread was on the buffet table… dim the lights and read the statement I’m about to make using a Nat Geo commentator voice… I approached the banana bread with a bit  of ambivalence seeing as my previous ‘banana bread encounters’ had been nothing to write home about, I sliced off an anorexic portion (this is probably the only time you are ever going to see the word anorexia on this blog!! hahahahaha!)  and proceeded to try it, …ditch the commentator voice…long story short I abandoned the rest of my food and went back for a fat chunk…(or three… my memory became a bit hazy coz of the banana bread high) of that slice of banana heaven ….sent my compliments to the banana cake maven that was the Chef…. and I got a lunch box (within which the banana cake featured heavily!) to take home with me – SCORE! *cue in sultry voice* I knew I just had to attempt to recreate and relieve the feelings I experienced when that banana bread was in my mouth!

(Side note: I need help, will someone get me out of my head!! the things that go on in there!! if I put a speaker in on it and broadcast what I say to myself, I would be institutionalised #createspaceinmathare.)

Moving on swiftly! About a week ago I was on Pinterest (after working hours OFCOURSE! *throat clearing!*) and I came across this a banana cake pin on pinterest, pinned from www.twopeasandtheirpod.com… one of the pictures made me nostalgic for the Serena Sweet Waters banana bread that had ingrained itself in my taste buds and the rest as they say is history! I went grocery shopping on a Tuesday saw a bunch of super ripe looking banana’s and harassed convinced (in a very lady like manner I should add) my grocer to sell the bananas to me for 5 shillings rather than the usual 10 shillings per B.A.N.A.N.A …. Don’t you just miss Gwen Stefani- Hollaback Girl! If by now you are still trying to figure out my train of thought as I write this post (an exercise in futility if you ask me!), let me help you out….anything that mentions bananas, stands a pretty good chance of making its way into this post! On that note being a Kitchenista is such back-breaking work so lets take a dance break….and wait with bated breath for the part about B.A.N.A.N.A.S

✦⊱ཞ Ingredients ཞ⊰✦

  • 3 1/2 cups all-purpose flour
  • 2 1/4 teaspoon baking powder
  • 1 teaspoon salt
  • 1/2 teaspoon baking soda
  • 1 cup unsalted butter, softened
  • 2 cup granulated sugar
  • 4 large eggs
  • 3 cups mashed bananas
  • 4 tablespoons buttermilk
  • 2 teaspoon vanilla extract

✦⊱ཞ Directions ཞ⊰✦

Grease and flour 3 large loaf pans and set aside…sorry I have no dimensions to give…I threw out the packaging the day I bought the pans…years ago, and I’ not about to whip out a measuring tape!! Use your inbuilt power of estimation and pick the no. of pans you think it will fit in!

Using a handheld mixer, cream butter and sugar together. Add the eggs, mashed bananas, buttermilk…I don’t have access to buttermilk so I made my own by mixing equal parts vinegar to milk… and vanilla and mix until the batter is well mixed.

In a container with a lid, place  the flour, baking powder, salt and baking soda and shake the bejesus out of it. Add the flour mixture incrementally into the creamed… (minds out of the dumpster please!)… batter and mix until well combined. Pour your batter into the greased and floured pans and bake at 350 degrees for 50-55 minutes or until a toothpick comes out clean (if you are fancy like me then you have a cake tester… the rest of you common folk can use a toothpick)

Place the banana bread on a wire rack and allow it to cool. you may have to loosen the sides of the bread from your pan using a knife . Once the bread is cooled you can enjoy a slice of banana heaven – with that first bite will be  like angels, choruses, the whole thing…and you won’t even have to walk towards the bright light!!

    You go girl.so so proud of you.i love your recipes.soon al start sharing photos of some of your recipes when i try them.i hope I can manage to stop myself from indulging before I take at least one photo.The urge to dig in comes way handy than finding my phone camera button.i hope i shall succeed.
